Whether you’ve made a New Year’s resolution to be healthier, or just need some new inspiration in the kitchen to kick-start 2023. These 5 quick and healthy recipes will have you not only looking forward to dinner in your household but should also boost your mood and energy levels.  

It doesn’t matter if you’re a natural in the kitchen or a novice, these quick and easy healthy recipes are difficult to get wrong.  

Healthy Salmon Pasta 

We all know salmon is a healthy dinner option, but it can get boring with rice and vegetables. This salmon pasta is bursting with flavour and accompanied by salmon, penne, vegetables and fresh basil. This is light, refreshing and packed with goodness. 

Prep time: 10 minutes 

Cook: 15 minutes 

Fridge Raid Rice 

This is fantastic recipe if you haven’t been to the shops in a while. Most of the ingredients you’ll be able to find in the fridge as part of your normal weekly shop, or in your store cupboard. Remember, you can always substitute the vegetables or protein used in this for what you have handy.  

Prep time: 15 minutes 

Cook: 15 minutes 

Vegan Burger

Whether you’re partaking in Veganuary or not – this is a delicious meal for the whole family. The beauty with this recipe is that you can use it as a base and add whatever you fancy – chilli flakes, vegan cheese, lemon zest or other herbs work really well.  

Prep time: 10 minutes 

Cook: 5-10 minutes 

Spicy Chicken & Avocado Wraps

You can’t get much quicker than this dinner recipe, it might take minutes to make but that doesn’t mean it substitutes flavour. Pan-fry the chicken breast with lime, chilli and garlic, then pile it on to your tortilla wrap. You can even make more of this, let it cool and assemble it for your lunch to take to work.  

Prep time: 5 minutes 

Cook: 8 minutes 

Coconut and Squash Dhansak

This quick and easy vegetarian curry is perfect for a healthy weeknight dinner – it’s packed with butternut squash, coconut milk, lentils and spinach. Add a splash of water to the butternut squash, cover with cling film and place in the microwave to really speed up the cooking time of this recipe.  

Prep time: 5 minutes 

Cook: 15 minutes
